Liophos high phenolic olive oil is produced entirely by the Stamatakos family, from the organic cultivation of olive trees to pressing and bottling in their own olive mill in Lakonia. The family manages approximately 3000 olive trees and works without synthetic pesticides or fertilisers, making each harvest dependent on the weather, the soil, and their own craftsmanship.

For Liophos high phenolic, the family selects only the healthiest trees and branches where the olives are at precisely the right, early ripening stage – green and firm, with a maximum level of natural polyphenols. This means some trees are skipped or harvested later, significantly limiting the total amount of oil available. Harvesting takes place early in the season (October–November) and largely by hand or with light mechanical aids, directly from the tree, so that the olives do not fall to the ground and become damaged.

The olives are then taken to the family's own, certified organic olive mill on the same day and cold-pressed at temperatures below 20°C, without heating. The oil is then immediately stored in stainless steel tanks, protected from light and air, and only bottled to order, ensuring the best possible preservation of taste and polyphenols.

Because the harvest is extremely early, the yield of oil per kilo of olives is much lower than with a late harvest: you need many more olives for the same amount of olive oil. Furthermore, the family deliberately chooses small batches, manual selection of the fruit and its own production rather than large industrial lines. All these factors make Liophos high phenolic a rare, labour-intensive olive oil with a limited quantity per year – a truly artisanal product, not mass-produced.
