Early Harvest Liophos comes from the Stamatakos family olive groves in Lakonia, a region with a long tradition of high-quality olive oil. The oil is made from a single variety: Koroneiki, the classic Greek olive known for its rich aroma and stable quality.

  • 100% Koroneiki olives, organically grown.

  • Early harvest (October–November), when the olives are still green and firm.

  • The olives are pressed the same day in the family's own olive oil mill, at low temperatures under ±20 °C (cold pressing / cold extraction).

  • The oil is then stored in stainless steel tanks, protected from light and air, before being bottled in 5L containers.

Due to its artisanal production, the quantities of Early Harvest Liophos are limited; the producer only extracts this oil from the first harvest period and not from the later, milder harvest.
